A place in Southern Colorado has no business having Texas style BBQ this good. We live in Oklahoma & spend time in Texas enjoying brisket that is rendered well with simple seasoning that hits just right. The owner is from Texas & could easily push out mediocre BBQ, but that's not the case here. They ship in Texas post oak from to get that smoke flavor & the seasoning was perfectly done. We had the smoked burger & some sliced brisket & it was incredible.

Had lunch & it was very tasty. My friend ordered the mixed plate (brisket, turkey and sausage) with the burnt end beans for the side. I got the pulled pork & beef filet with green chili grits. It was all very good. The service was awesome as well as the food. Can't wait to come back and try the pork & beef ribs! If you are in the Pagosa area, a MUST TRY!

Being from Texas, I have pretty lofty standards when it comes to BBQ, but this place passes the test with flying colors! The pitmaster is from Texas, so that explains it. That ain't gonna be cheap. But to get brisket of this quality in this locale is worth the couple extra bucks. I suggest going on a nice clear day when you can fully take in the mountain views from the clubhouse deck. Very nice!

The brisket is amazing but the beef ribs were truly transcendent. We were there the week of July 4 which is a busy time, so we came early & preordered the ribs. The sides were unique & delicious - pickles, slaw, & CHARRO BEANS. I don’t usually go crazy for beans but these have burnt ends & could be a meal by themselves. Mexican street corn also a favorite. Plan to go more than once, pick it up after a river day & take a nap after. Heaven.

Everything we tried was OUT OF THIS WORLD delicious! (Brisket - sliced and chopped, green chili and cheddar grits, charro beans, berry and peach cobbler) EXCELLENT beer selection on tap. "Six stars” defines our meal & experience! The food was "over the top". All meats were great & all sides, too. We tried brisket, sausage & turkey. All great. Sampled 3 sauces & it was difficult to pick a favorite. Per the three sides, those were very unique and so tasty. The homemade Peach Cobbler was heavenly! Overall, exceptional experience! So glad Pagosa Springs has this superb addition for us Foodies!

An amazing find so far from central Texas. After a long hike, we found some of the best BBQ we have had in a long time. The brisket & bacon brisket are perfectly complimented by the sides. You could tell everything was made with passion. I got the chance to talk to the owners & pit master & I could tell they shared my love of BBQ. This bbq is excellent. They start w/prime cut brisket & cook it slowly. Great moist flavor w/a dark bark. Their turkey is beautifully smoky, moist & tender. Try their beef ribs, a special on Sundays. These ribs seem as big as a dinosaur bone & are a savory masterpiece. Their Mexican street corn is seasoned well & the cole slaw w/red cabbage & cranberries was tangy & a tad sweet.

The green chili grits are the bomb diggity! So good! I tried all three sauces & the tomato based sauce was my favorite. I added some fresh onion & jalapeños to the sandwich & it was delightful! This was our second time eating Bar-B-Cue at Square Top and they knocked it out of the ballpark. They serve massive, mouth watering beef ribs on Sunday. The meat was moist, tender, had a nice smoke taste and excellent bark. Also their brisket and all the trimmings were superior over any I have tried in Pagosa/Durango area. Don't leave without trying their side dish of Mexican street corn. It's nice to have barbecue of this caliber in Pagosa.

Incredible French Dip sandwich blew me away! The au jus is so delicious that I took the rest home & the green Chile horseradish sauce was perfect. I will definitely be eating this frequently. Also, the chopped brisket sandwich is to die for. I will come back for the beef rib, it looks very decadent. The huge deck has officially opened & the view is breathtaking, especially at sunset. You should come eat here, definitely!!!!

Wonderful lunch spot. The view is amazing & the staff is beyond gracious. The most delicious French dip sandwich I have ever had- it was full of filet mignon which puts it in another league. My husband had the chopped brisket sandwich which was equally delicious. There are several great beers. They smoke their own meats daily. I recommend for an outstanding lunch complete w/a beautiful view. Can’t wait to go back for the ribs!

Texans loved this Colorado BBQ The restaurant overlooks the golf course, so the setting is beautiful. We watched the owner smoking meat, so we knew it was fresh. Both the brisket and the turkey were delicious. The sides are outstanding. The red cabbage/cranberry slaw may be the best slaw I've ever eaten, and the corn casserole if wonderful.
